When ordering six or more items off of our lunch menu, please order at least 48 hours ahead of time to have your order ready at your desired pick-up time. For lunch orders, items can be wrapped individually, or arranged on a metal tray and covered.
For catering orders and quotes, please provide the number of servings desired and select dishes from the list below. Please inquire about catering at least two weeks ahead of your desired pick-up date.
Our charcuterie boards include assorted seasonal selections of smoked and cured meats, pickled veggies, local cheese, and fresh bread, laid out on a local hardwood board. Please order at least two weeks ahead of time.

There are two sizes of charcuterie boards:
● MEDIUM – serves 4 to 6 people - $170 ($50 deposit required for hardwood board)
● LARGE – serves 8 to 12 people - $300 ($100 deposit required for hardwood board)
*A refundable deposit is required for the hardwood board on which the charcuterie items are laid out. Deposits will be refunded when returned within 48 hours of pick-up date. If you would prefer not to take a hardwood board and make a deposit, the charcuterie board contents can be picked up on a metal pan instead.
Meats are served cold and depend on selection currently available:
● Ham - brined and smoked pork leg shaved thin
● Pastrami - traditional Jewish-style corned beef, seasoned with shop pastrami crust, smoked for 8 hours, thin shaved
● Head cheese - French-style, brined, slow-cooked, shredded, seasoned with OK Farms preserved citrus and garden herbs, set in it’s own juices
● Rillettes - pork confit very slowly in fat and seasonings, shredded, seasoned with dijon, pepper, and honey
● Pâté - Chicken liver seared Punachicks livers, blended with local eggs, butter, caramelized onions and garden herbs
● Beef and pork terrine: ground local meats, seasoned and poached in a terrine mold, served with mustard
Deli-style sliced sausages:
soprasseta: spicy garlicky Italian-style pork
pepperoni: beef and pork, classic spices, Kiawe smoked
bologna: traditional savory Italian deli meat (just like your grandma used to make)
mortadella: fancy bologna, studded with local macadamia nuts and hand-cut pork lardelli

How far in advance do I need to place my catering order?
At least 48 hours in advance for ordering more than six items off of the lunch menu and at least two weeks in advance for catering.
How do I place my catering order?
Please use our online order form at the top of this page and we’ll get back to you with a quote, give us a call, or come into the shop.
What is included in my catering order?
For lunch orders, sandwiches can be wrapped individually, or arranged on a metal tray and covered.
For catering orders, each dish is ready for pick-up in a covered metal tray.
For charcuterie boards, the items are laid out on a local wooden board made by Kamuela Hardwoods and covered for transport.
We do not provide cutlery, plates, serving utensils, or other catering supplies.
Do you deliver?
No, we do not deliver or do on-site catering. All orders must be picked up at Waimea Butcher Shop.
When can I pick up my order?
Monday through Friday from 11 a.m. to 5 p.m. or on Saturdays from 11 a.m. to 4 p.m. We are closed on Sundays.
Where do I pick up my catering order?
All orders must be picked up at the scheduled pick-up time at 64-1032 Māmalahoa Hwy, Suite 101, Waimea, Hawai`i.
